Did you see Thora's recipe in the comments? I've never actually cooked with Kale before, but I'm going to give it a try and see how the family likes it.

Here is something I whipped up last night out of my head:

Black Bean & Corn Salad
  1. 1 can black beans, rinsed
  2. 1 cup of frozen corn
  3. 1 tomato diced
  4. 1 onion diced
  5. 1 TBSP chili powder
  6. 2 sachets Sazon Goya Tomato and Cilantro seasoning
Mix ingredients in a bowl and chill for a few hours or overnight. Serve as a side dish or as a filling in burritos, enchiladas, quesadillas, tostadas, nachos, pita/wrap sandwiches... Sean said he'd like this salad warm.
**note: Sazon Goya seasonings have MSG, just in case you are sensitive to that kind of thing. Substitute cumin, cilantro, garlic, lemon... or whatever you have on hand that you think might go well.
